Making a wonderfully tasty Mediterranean Chicken casserole has never been easier using your versatile Orgreenic cookware.

Preparation Time: approx 20mins Cooking Time: 75mins

Ingredients (serves 4)

2 tsp olive oil 1 kg chicken thighs (de-boned) 1 large brown onion, halved and thinly sliced 2 carrots cut into thin slices 3 celery sticks, trimmed, cut into 2cm-thick slices 2 garlic cloves, crushed 2 x 400g cans diced Italian tomatoes 1 litre of chicken stock 1 tbs fresh thyme leaves 200g black Kalamata Olives (pitted) 1 cup of dry, red wine Freshly ground black pepper

Optional: pasta, mash potato or polenta (as a bed to serve on)

Method Preheat oven to 180°C. Heat the oil in your non-stick Orgreenic cooking pan over medium heat. Add the chicken and cook, turning occasionally, for 5 minutes or until brown all over. Transfer chicken to a separate dish.

Add onion, garlic, carrot and celery to the frying pan and cook, stirring, for 5 minutes or until soft. Add tomato, stock, and wine, and then bring to the boil. Reduce heat and allow to simmer. Return chicken to cooking pan.

Cover the cooking dish with a tight-fitting lid or foil. Bake in oven for 60 minutes or until chicken is tender. Add olives and half the thyme and cook for a further 15 minutes. Remove from oven. Taste and season with pepper.

At the same time prepare your pasta, mash or polenta.

Spoon casserole into a large serving bowl. Sprinkle with remaining thyme and serve with pasta, mash or polenta as desired.
